The new year festival that is celebrated as the grandest of all down south is Ugadi or Yugadi – the regional new year of Karnataka Andhra Pradesh. Ugadi brings out the festival flavours among everyone who gets together to celebrate this with Pachadi – the notable festive dish that combines tastes of bitter, sour, sweet, tangy, salty. Not just this, Ugadi has kitchens smelling of the most tasteful and delicious of sweets like HoligeSweet Pongal, Badam Halwa, Rava Kesari, Rice Ladoos, Pasayam and more.

Since this is also the time of the season of a variety of the juiciest of mangoes, we share with you a simple to make & quick Mango sweet dish to relish this Ugadi.

Ingredients:

1) 2 ½ cups milk

2) 1 cup basmati brown rice previously soaked in water for 15 minutes

3) 3 – 4 tbsp sugar (*depends on your palate and taste)

4) 1 ½ cup of sweet mango puree

5) 2 cardamoms (ground powder)

6) Pinch of saffron

7) 4 almonds chopped, 4-5- Raisins,

8) 2 – 3 cloves

How to Make:

1) First boil the milk and mix brown rice and later add sugar. Keep stirring until the rice cooks well and is soft

2) Add Mango Puree into this and stir well

3) Now add saffron, ground cardamom, cloves & gently stir again

4) Sprinkle dry fruits and keep aside

5) Once the dish cools down in room temperature, refrigerate

6) Serve chilled
